This is our first release from Tanzania and we couldn't be more excited to share this beautiful Gesha from Neel and Kavita Vohora at Gaia Farm. Nestled on the southern rim of Ngorongoro Crater in Northern Tanzania, Gaia is one of two farms managed by the siblings. Here, they cultivate a number of varietals including Bourbon, Kent, SL-28, SL-34, and Gesha.
This coffee is moderate-intervention washed process, with a short pre-fermentation in cherry before being depulped and fermented for 36-54 hours in mucilage. After fermentation, the coffee is washed in fresh spring water before being dried on raised beds. With notes of clementine and peach, floral jasmine, and a cherry and milk chocolate sweetness as it cools, this is a beautiful depiction of both varietal and region.
We love this coffee across a number of brew methods, but keep finding ourselves returning to the trusty 1:17 on a V60. With fast flow filters, we recommend a medium-fine grind with moderate agitation. With standard filters, we recommend a medium grind and expect a long drawdown time.
