An exciting coffee with acidity reminiscent of your favorite lemon-lime soda. Clean in the cup with notes of caramelized pear and toffee-like sweetness, this is a beautiful example of the care and technique used at Qunqana washing station.
Qunqana washing station was founded by Asefa Dukamo and MuluGeta Dukamo, where they sort, weigh, and purchase the cherries from a number of smallholder farmers in the region. Asefa and MuluGeta now own their own farm, Daye Bensa, 16 washing stations, and 4 dry mills in Sidama.
We find that this coffee does well with a conical dripper and a fast brew time. We recommend a 1:17 ratio on pour over or a 1:2 ratio in ~24s on espresso.
